Basic Dinner Rolls
1 package active dry yeast
1/4 cup warm water
2 eggs
1 2/3 cup milk, scalded and cooled
1/2 cup (1 cube) melted butter or margarine
1 1/2 teaspoons salt
1/2 cup sugar
6 cups flour
Sprinkle yeast into a large bowl. Add warm water and stir until dissolved. Mix in eggs, milk, butter, salt and sugar. Gradually add 5 cups flour, one a a time, beating until smooth after each addition. Use last cup of flour on bread board. Turn dough onto heavily floured board and knead until dough is smooth and elastic (about 5-7 min.). Place dough into greased bowl, cover and let rise in warm place (80 degrees) until double in size. Punch down dough and shape into favorite dinner roll shapes. Space rolls about 1 inch apart on greased baking sheets or muffin pans. Cover with plastic film or foil and freeze immediately. When frozen--remove from pans and store in freezer in plastic bags.
To bake frozen or fresh rolls, space about 1 inch apart on greased baking pans. Cover and let set in a warm place (80 degrees) until double in size (about 1 1/2 - 2 hours). Bake in 450 degree oven about 10 minutes or until browned.
