Oatmeal Bread

1 cake compressed or 1 pkg dry yeast
2 1/2 cups luke-warm water
2 tsp salt
1 tbsp shortening
1/2 cup brown sugar
2 cups rolled oats
6 to 6 1/2 cups sifted flour

Add water to yeast in large bowl. Allow to dissolve. Add salt, shortening, sugar, rolled oats and flour. Knead to a smooth dough. Let rise until doubled (1 1/2 hours). shape into two loaves. Let rise until double. Bake at 450 degrees for 15 minutes, then 400 degrees for 30 minutes longer.

[This is printed on a bright yellow card with a red design on the top & bottom. The top says "Reddy Recipes", and has that really old utilities logo from the 1960s: Reddy, with outlet ears and a lightbulb nose (kind of like Rudolph the Red-Nosed Reindeer), and sporting a chef's hat for the occasion. At the bottom it reads "prepared by home service dept.--Arizona Public Service." Note to self--be sure to get the 2006 collection of APS recipes. ;P]
