Curried Egg Strata

1/4 cup mayonnaise
1 teaspoon curry powder
4 slices firm whole wheat bread, lightly toasted
4 slices firm white bread, lightly toasted
3 hard-cooked eggs
1/4 cup chopped green onion
2 ounces Swiss cheese, shredded (1/2 cup)
3 eggs
2 1/2 cups milk
1 teaspoon salt

1. Combine mayonnaise and curry powder in small bowl. Spread on two slices of the whole wheat and two slices of the white bread. Cut slices into quarters. Place in bottom of buttered 6-cup shallow baking pan.

2. Slice hard-cooked dggs and place on top of bread. Sprinkle with green onions and the cheese.

3. Cut remaining 4 slices bread into quarters. Arrange in checkerboard design over the cheese.

4. Beat eggs slightly in medium-size bowl; stir in milk and salt. Pour over bread.

5. Cover and chill at least 1 hour or overnight.

6. Bake, uncovered, in a moderate oven (375) for 45 minutes or until puffed and golden. Remove to wire rack. Let stand 10 minutes before serving.

Makes 4 servings

[Magazine clipping. Suggests serving with chutney or pickled melon rind for a "pleasant flavor combination."]
